Recipes for Medium Bodied Red wines, or aged wines

We have chosen these recipes to balance with medium bodied wines. Sometimes a delicate wine can get lost in a big recipe flavour, and vice versa.

Remember, these are only suggestions, the best is try things out for yourself!

   
   
  Ultimate Dinner Party Music:
Honey mustard baste for lamb
Honey mustard baste for lambServes: 5
Preparation Time: 5 minutes
Cooking Time: 20 minutes

Ingredients

1/3 cup   olive oil
1 clove   garlic, finely-chopped
1 tbsp   wholegrain mustard
2 tbsp   honey
1 tbsp   fresh herbs of your choice, roughly chopped
2 tbsp   red wine
Method
1.   Combine all ingredients and brush over meat immediately before and during cooking.
2.   Be careful the honey does not cause excessive charring.
3.   Cook to desired doneness and rest well before serving.
Tip:
Char-grilled red meat can be served in the traditional manner, with salad and/or barbecued vegetables, adding a compounded butter or sauce if desired. Or you can cut the meat into chunks or slices and serve as a maincourse salad, wrap, or pasta dish.
Serving Suggestion:
Skewered presentations can also be attractive, and often lend themselves to serving with rice or couscous accompaniments.
 

Perfect for a sunny Sunday Afternoon, backyard BBQ with good friends.

Very relaxed - need a glass of hair-of-the-dog in your hand for this.

Lamb Chops with Feta, Tomato, AsparagusLamb Chops with Feta, Tomato, Asparagus

Serves: 4
Preparation Time: 5 minutes
Cooking Time: 20 minutes

Ingredients
    8-12 Lamb chops or cutlets
2 bunches   asparagus, trimmed
2 tbsp   olive oil
2 tbsp   lemon juice
12   cherry tomatoes, quartered
1/3 cup   feta cheese, crumbled
Method
1.   Heat grill or BBQ. Place the chops and asparagus in 2 separate dishes and pour the olive oil and lemon juice over both.
2.   Cook chops for 4-5 minutes on each side or until cooked to your liking. Whilst the chops are cooking, add the asparagus to the barbecue and cook for 4-5 minutes, or until golden and tender.
3.   Scatter the cherry tomatoes and feta over the chops and asparagus.
Serving Suggestion:
Serve with extra wedges of lemon, new potatoes and green salad.
 
I swear I spoil you - this is my secret weapon for dinner parties  this one has a relaxed up-tempo feel - definitely for a Saturday night dinner party with good friends.

Lamb Steak SandwichLamb Steak Sandwich

Serves: 4
Preparation Time: 10 minutes
Cooking Time: 20 minutes

Ingredients
4   4 Lamb steaks, seasoned with salt and black pepper
1 tbsp   olive oil
1   red onion, thinly sliced
1 cup   baby spinach leaves
8   slices Turkish bread, toasted
1/3 cup   beetroot dip
Method
1.   Heat half of the oil on the BBQ. Gently cook the onion until soft and golden. Set aside.
2.   Coat steaks in remaining oil and cook for 2-3 minutes on each side or until cooked to your liking.
3.   Using the toasted Turkish bread make sandwiches with the baby spinach, steaks, cooked onion and beetroot dip.

Lamb, tomato and avocado open sandwichLamb, tomato and avocado open sandwich

Serves: 4
Preparation Time: 10 minutes
Cooking Time: 12 minutes

Ingredients
300 g   lamb steak (round or topside)
1 tsp   oil
1/4 cup   mayonnaise
1/2 clove   garlic, crushed
4   thick slices of your favourite bread, toasted
1/4 cup   sun-dried tomato pesto
125 g   cherry tomatoes, halved
1/2   avocado, thinly sliced
20 g   baby spinach leaves
Method
1.   Preheat a char-grill pan to moderately hot.
2.   Brush lamb steaks with oil.
3.   Cook on first side until moisture appears, turn, and cook until done to your liking. Rest for two minutes.
4.   Combine mayonnaise and garlic.
5.   Spread the bread with sun-dried tomato pesto.
6.   Slice Lamb steaks diagonally and arrange on the bread along with the tomatoes, avocado and spinach.
Serving Suggestion:

Serve with the mayonnaise.
